How to Make Spruce Needle Wine

Add 2 tablespoons of coarsely chopped spruce needles in one liter (4 cups) of boiling hot high-quality red wine. Pour everything into a glass bottle or jar, seal, and allow to infuse for the next 10 days. Shake daily. Strain the infused wine through cheesecloth without squeezing, to prevent the deposits from falling in. Allow to settle in the refrigerator for another 6 days, for complete clarification. Keep in amber glass bottles at room temperature. The shelf life of the spruce needle wine is one year if the alcohol content in the wine is at least 11%. In case you use a lower alcohol content wine, keep it in the refrigerator.
