How to Harvest Cornelian Cherries

The harvesting time for cornelian cherries (Cornus mas) is in September-October, when the berries are well-ripe, meaning that the active principles are at their peak. Ripe cornelian cherries have a bright red color and a pleasant, sweet-sour taste. Dry the cherries in shaded places, away from moisture, in a very thin layer (ideally they should not touch each other). The drying process is quite long, taking about 1-3 weeks, and it is done when the pulp of the cherries is completely dehydrated and slightly brittle, breaking easily when cutting the berries with a knife. After drying, keep the cornelian cherries in gauze bags, or paper bags, and store them in the dark, in dry places.

The bark from the trunk of the cornelian bush is also used in medical therapy. It is harvested in early spring, when the cornelian starts to vegetate. Cornel bark, rich in tannins, is used as powder or decoction, to lower fever of viral conditions (flu, whooping cough, cold).

Finely grind the very well-dried cherries using an electric coffee grinder. To make grinding easier, before grinding, dehydrate the berries on low heat in the electric oven, with the door ajar, or at 100°C/212°F, for 20 minutes. The cornelian cherry powder is taken with raw honey or as is.
